Freyja is our light and flavorful blonde braggot. Two-row barley and wheat provide much of the body while a simple addition of Crystal and Cascade hops gives a subtle, yet present hop flavor. We've kept the flavors of this braggot simple in order to let the true star, honeybush, shine through. Honeybush is a South African herbal tea that we blended with local wildflower honey to create a delicate, but distinctly flavored braggot!
Reverence is our take on a red ale. In this braggot, certified organic two row and specialty malts provide a strong malt profile and rich red color. Multiple hop additions, including dry-hopping, give Reverence a distinct, but not overpowering, hoppiness. The star ingredient, orange blossom honey, serves to balance out the hops while providing an inimitable aroma and truly unique taste. Reverence is more than just a beverage- it's a sensory experience. Enjoy.
Battle Axe is our flagship IPA style braggot. We took the light wildflower honey and combined it with a generous amount of Chinook, Cascade, Columbus, and Centennial hops. followed by a dry hop addition of Zythosto create an extremely floral and fragrant IPA. This IPA is a balance between the bitterness of all the hop additions and the wildflower honey, that leans slightly on the hoppier end. It is the Viking spin on our favorite Northwest style. Enjoy.
Fenrir is our American style stout. A rich and roasty malt backbone provides notes of coffee and chocolate which is complimented by a regional blend of honey consisting of mainly wildflowers and orange blossoms that gives way to a very complex, but still drinkable stout. Amply hopped with Nugget and Chinook hops, we hoped to achieve a bitter yet balance braggot that could be enjoyed any time of the year!
Our Pineapple IPA is delicious balance of fruity pineapple flavors with a generous amount of bittering and aroma hops. An organic grain bill comprised mostly of 2-row and white wheat malt, with a handful of specialty grains provides a strong body for this brew. Northern Brewer and Columbus hops provide the bittering while more Columbus, Chinook, Cascade and Centennial hops add aroma. This hop heavy braggot is balanced by local wildlfower honey and is then conditioned on freshly chopped Maui Gold pineapples to create a tropical aroma and fruity flavor!
Our inaugural brew, Valhalla, is a braggot brewed in the style of a Belgian Pale Ale with the finest wildflower honey. The delicate malt profile, created by a blend of three certified organic malts, allows the flavor of the honey to round out the slight bitterness provided by Northern Brewer and Mt. Hood hops. Those with especially keen senses will detect a slight blueberry scent from our proprietary blueberry infusion. Enjoy.
Valkyrie is a Belgian-style amber braggot. Distinctive Belgian flavor is provided by Trappist yeast. A blend of three organic malts in combination with several specialty malts gives Valkyrie a smooth body and brilliant amber color. Four different hop varieties give a slight bitterness with the addition of whole Marion blackberries giving an extra subtle tartness. Wildflower honey balances out the flavor profile and gives a smooth finish. With a secret infusion of the ancient herb Tulsi, Valkyrie has lightly euphoric and energizing properties. Enjoy.
Our Winter Squash Porter is crafted with pounds of hand cut Delecata winter squash and turnip honey to give this dark ale its smooth, velvety flavor. Hand selected roasted and caramel malts give this braggot its rich dark color with robust notes of coffee and chocolate. Copious amount of piney, resinous hops are added at the boil for a fresh, winter bite. We suggest you pair this braggot with a hearty winter meal or enjoy fireside as a dessert.
